I picked this up at The General Trader, while I was getting an oven thermometer for someone at work who was having some oven-temperature-related baking woes - it's just not right for things to be both burnt on the outside and raw in the middle ! (unless you're after a black and blue steak - that's different!). There's a few things that have been on my list of things to try make that I've been putting off because even with descriptions of what molten sugar does at various temperatures, I don't really trust that I'll interpret the reactions the same way.
